Charity Begins at Home: and It’s Often Tax-Deductible
The holiday season means something different to everyone. For many, it is a time of giving and celebrating. It is important to look not only to our friends and families but also at the needs of our neighbors and community. The nonprofit organizations in Rowan County offer diverse opportunities to give, many of which are tax-deductible.
Whether you choose to donate to one of Rowan County’s 404 nonprofits registered with the secretary of state or to one of the many that are unregistered, including churches, you can celebrate the season knowing that you helped a good cause and improved the lives of others. Because there are various types of nonprofits, consider giving to one of the 68% that offer tax-deductible donations. These are listed as 501 (c) (3) organizations and include public charities, private foundations and churches. Schools, hospitals, elderly care programs and poverty assistance programs are among the many types of nonprofits and all require the help of the community in order to continue. Keep them in mind as you decide how to give.

Upward Ministry
Upward: Where Fitness Meets Faith
For six years, the Upward ministry has
brought sportsmanship and Christian values to community leagues in Rowan County. From basketball, soccer and flag football to cheerleading, Recreation Minister Caz McCaslin’s brain child helps children enjoy sports without competition.
Boys and girls from kindergarten to eighth grade are able to play and be part of a team without the pressures of score keeping and win/loss records. Devotions, held during halftime and practice, uplift the players and coaching staff, all of whom are volunteers. The league’s policies of substitution and placement, which ensure that each child gets to play and that teams are balanced in terms of skill, leave children and parents free to focus on the fun of the game.

Man of Many Talents: For Dale Higbee, Good Genes, Luck, and a Passion for Living Lead to Longevity and Contentment
Dale Higbee came to North Carolina in 1955 as a clinical psychologist at the recently opened VA Medical Center. Prior to that and each day since, he has embraced music and health as the basis of a happy life. “Without good health, everything else is zilch,” says Dale.
Dale learned to play the flute at age 11 and intended to study at Julliard until World War II altered his plans. Since then he has studied at Harvard, earned a Ph.D. from the University of Texas, traveled the world and played with three of Charlottes orchestras. As the founder of Carolina Baroque, an ensemble composed of period instruments and voices, and two recorder consorts, he celebrates local musical talent and embraces his lifelong hobby.

It's Pound Cake Time
Pound Cakes: Perfect for
Any Occasion
The holiday season is a wonderful
time to gather with friends and
family and celebrate over delicious
food. Pound cakes are a tasty,
simple dessert perfect for
Christmas, New Year's or any day.
Yellow Pound Cake
2-2/3 cups white sugar
2 cups butter
8 eggs
8 tablespoons milk
1 teaspoon vanilla extract
3-1/2 cups cake flour
Separate the eggs. Beat the whites to stiff peaks, and reserve the yolks. In a large bowl, cream sugar and butter or margarine. Beat in egg yolks. Stir in milk and vanilla. Add flour, 1 cup at a time. Fold in stiffly beaten egg whites. Pour batter into well-greased large tube pan. Bake for 90 minutes at 325° F. (This cake is delicious even without icing).
Chocolate Chip Amaretto Pound Cake
3 eggs
1 (18.25 ounce) package devil’s food cake mix
1/3 cup vegetable oil
1 cup water
2 tablespoons almond extract
1 cup semisweet chocolate chips
1/4 cup confectioners’ sugar for dusting
Preheat the oven to 350° F. Grease a bundt pan. Mix eggs, cake mix, oil, water and almond extract with electric beater. Stir in chocolate chips. Pour into prepared pan. Bake approximately 1 hour or until cake tests done. Cool and dust with confectioners’ sugar.
